Extra Sugar | Chocolate Flower Cake Topper

Working with chocolate can seem pretty simple at first. However, once you realize that candy melts, chocolate bark and chocolate chips weren't all made equal, you'll understand that there's more science to creating chocolate decorations than most would think.

If you're interested in working with chocolate, but you're not sure how to get started...check out this 3 hour class where you will learn how to make different floral designs out of chocolate using various techniques. Then, you'll pull it all together to create a gorgeous and delicious cake topper that you can take home!

In addition, in class you will also learn the art of properly tempering couverture chocolate and how to use cocoa butter to enhance your chocolate flowers.

    About Chef Joseph

    Attend the Ultimate Sugar Show and learn how to create a chocolate box with pastry chef Joseph Cumm.Chef Joseph Cumm, CEPC currently works for CSM Bakery Solutions. Throughout the year, you can also find him traveling the country teaching many different techniques for all things pastry. Chef Joe has been creating pastry for the past 20 years and teaching pastry arts for the past 10 years. He is a Summa Cum Laude graduate of Johnson and Wales University where he was trained as a classical pastry chef. In 2010, he was nominated for Teacher of the Year for Two-Year colleges in the state of Virginia. Chef Joe takes great pride in teaching all aspects of pastry and enjoys watching his students push themselves to levels they never knew existed. His cakes’ and desserts have appeared in several magazines.
