Who knew you could carve, sculpt buttercream just like it was clay?? Well, even if you've never heard of buttercream sculpting before at the Ultimate Sugar Show, you can actually learn how to do it from an artist you has perfected this gorgeous technique.
Join accomplished sugar artist Renay Zamora and learn the art of sculpting with buttercream in this intermediate/advance buttercream techniques class. In this class you learn the how to properly use sculpting tools on buttercream and the different techniques and methods in which this medium can be applied.
You will also learn how to create a basic foundation structure, how to apply buttercream for sculpting and how to achieve a smooth, stone-like finish. In addition, you will learn how to use mediums such as fondant/gumpaste on a buttercream sculpture as well as how to add color through airbrushing.
- Identify the equipment necessary for sculpting buttercream
- Prepare a structure for sculpting.
- Learn how to apply buttercream for sculpting (smack it on there!)
- Demonstrate sculpting methods.
- Demonstrate various decoration possibilities: fondant/gumpaste, airbrushing, etc.

Renay Zamora is the owner/artist of Nashville, TN-based Sweetface Cakes.
She has created custom cakes for such notable celebrities as Willie Nelson, Jack White, Joe Don Rooney of Rascal Flatts and his wife Tiffani Fallon of Playboy fame, Emily Maynard of ABC’s The Bachelorette, Rock N’ Roll Icon Bebe Buell, Country Music artist Leeann Womack & her husband/producer Frank Liddell and actress Lucy Hale of ABC Family’s Pretty Little Liars, amongst others.
Renay was featured as the cake artist for Team Morbid Morticians on Food Network’s Halloween Wars, Season Five. She also worked alongside her teammate Becky Wortman to create the iconic “Angel and the Lion” buttercream sculpture for 2015 OSSAS and the Tulsa State Fair and has shared her passion for cake art and buttercream sculpting as an artist educator at cake shows.
